This soup dumplings are a kind of baozi (filled bun) usually related to Shanghainese cuisine. They are filled with pork meat and soup, and then steamed in a bamboo basket and eaten with soy sauce and ginger. Other variations can be filled with vegetables or seafood.
The most famous restaurant in Taipei is the Ding Tai Fung in Yongkang.

While Yong Kang is the "original" and most famous - there are several other brances of Din Tai Fung in Taipei that are just as good and much shorter - 2 are right at/or near Zhongxiao Fuxing MRT. The other location is in the Sogo in Tienmu which is usually the least crowded (and the two in the Sogo take credit cards which is nice).
