This dish, originally from Tainan city, it's just a century old, but has become a real star in Taiwanese cuisine. The noodles are served in soup with bean sprouts, shallots, cilantro, vinegar garlic sauce and topped with braised and minced pork and fresh shrimp. Several restaurants in Tainan claim to be the heirs of the fisherman Hong, who invented the recipe. In Taipei you can taste them at Tu Hsiao Yueh in Yongkang street.
