Although this is a very tradional dish, the best by far that we tried was in the Restaurante Mariano. Who ever thought this concoction should be given the Nobel Prize for cooking. Chips are hot and cooked in olive oil, the Jamon is the best flavour and the egg yolks at least have to be a little runny. First thing you do is slilce it all up together and turn it into a mish mash of yum yum... then, yes, and then tuck in... pretty damn good I must say....
